Stuffed Peppers Recipe

Ingredients

  • 2 1/2 cups chicken stock
  • 1 cup uncooked farro
  • 2 red bell peppers, cut in half lengthwise, cored, and seeded
  • 2 yellow bell peppers, cut in half lengthwise, cored, and seeded
  • 2 orange bell peppers, cut in half lengthwise, cored, and seeded
  • 2 tablespoons extra virgin olive oil
  • 1 large Vidalia onion, chopped
  • 4 cloves garlic, minced
  • 1 1/2 pounds ground chicken
  • 1 1/2 cups fresh or frozen corn kernels
  • 4 Roma tomatoes, chopped
  • 1/2 cup roughly chopped basil leaves
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 12 ounces fresh mozzarella cheese, sliced into 12 pieces
