Stuffed Jalapeños Wrapped in Puff Pastry Recipe

I saw a recipe for these a few weeks ago, but didn't pay too much attention, as I haven't recently seen jalapeños in our local grocery store; at least none that I wanted to pay money for. Yesterday, though, I noticed some lovely ones as I was buying some produce, sooooo...
Anyway, I couldn't find the original recipe, so improvised, and boy did these ever turn out nicely!
I'm only listing the ingredients (besides the peppers) that I had on hand, so feel free to play around with the filling.

  • 6 jalapeños, sliced in half lengthwise, seeds and membrane discarded. Wearing gloves for this step is highly recommended.
  • 1 tub (227 g, or nearly one cup) Philadelphia chive and onion cream cheese spread.
  • 1/2 cup shredded cheddar
  • 2 slices bacon, small dice, fried crisp and drained of grease
  • 2 Tbsp. Roasted garlic
  • Salt and pepper to taste
  • 1 package puff pastry
  • Egg wash (1 egg beaten with 1 Tbsp water)


  1. Preheat oven to 400 F
  2. Place about 6 cloves of garlic on a piece of foil, drizzle with a little olive oil, salt and pepper, close up the foil, then roast in the oven for about 1/2 hour. When done, remove from the foil and mash with a fork.
  3. In a medium bowl, combine cream cheese, bacon bits, cheddar, garlic, and the salt and pepper. Mix completely and spoon this mixture into the pepper halves.
  4. Roll out each of the puff pastry sheets (there should be 2) into a 9x13 rectangle.
  5. Cut each sheet into 6 squares. Lightly brush egg wash onto edges of each square. Place a jalapeño half face down onto a square corner-wise, then fold up, sealing as well as possible. Some filling will leak out during baking anyway, but not too much.
  6. Place the wrapped peppers, cut side up onto a parchment lined bake sheet and bake for 20 to 25 minutes.
