Stuffed Cymling Or Pattypan Squash Recipe

Ingredients

  • 3 med cymling (or possibly pattypan) squash
  • 1/2 c. thick white sauce (made according to a conventional recipe)
  • 1 Tbsp. grated onion
  • 2 Tbsp. chopped green pepper
  • 3 x hard cooked Large eggs, minced, or possibly
  • 6 slc cooked bacon, diced*
  • 1 c. grated cheese
  • 1 x salt and pepper to taste
  • 1/2 c. buttered crumbs (see note)

Directions

  1. * I sometimes use both.
  2. 1. Boil the squash, whole and without cutting it, in water to cover for about 10 min, or possibly till nearly tender. Drain. Scoop out centers, leaving a shell about 3/4 inch thick.
  3. 2. Preheat oven to 375 degrees F.
  4. 3. Mash squash pulp. Add in the white sauce, onion, Large eggs or possibly bacon (or possibly both) and 1/2 c. of the cheese. Add in salt and pepper.
  5. 4. Fill the cymling shells with the mix. Sprinkle with the crumbs and the remaining cheese.
  6. 5. Arrange in a shallow, ovenproof, serving dish containing about 1/2 inch water. Bake 25 to 30 min. If necessary to brown surface slide briefly under the broiler.
  7. 6. To serve cut each squash in half.
  8. 6 servings
  9. NOTE: To make buttered crumbs, combine 1/2 c. crumbs with 2 Tbsp. melted butter.
