Stuffed Cabbage Rolls With Yogurt Dill Sauce

Ingredients

  • 1 lrg Green cabbage head - (abt 3 lbs) cored
  • 2 Tbsp. Extra virgin olive oil
  • 3 lrg Green onions sliced
  • 2 lrg Garlic cloves chopped
  • 1 lb Grnd lamb
  • 2 c. Plain yogurt divided
  • 4 Tbsp. Fresh snipped dill divided
  • 1 1/2 tsp Tabasco pepper sauce
  • 1 1/2 tsp Salt

Directions

  1. Over high heat, heat large pot of water to boiling. Add in cabbage, core-end down. Reduce heat to medium. Cover and simmer till leaves are softened, 10 to 12 min. Remove cabbage to bowl of cool water. Separate 16 large leaves from head of cabbage. Trim tough ribs on back of leaves so which they will roll up easily.   2. In 12-inch skillet, over medium heat, in warm oil, cook minced cabbage, green onions and garlic till tender, about 10 min, stirring occasionally. With slotted spoon, remove to bowl. In drippings remaining in skillet over high heat, cook grnd lamb till well browned on all sides, stirring frequently. Remove to bowl with cabbage.
  3. In food processor, blend lamb mix till finely grnd. In large bowl, toss lamb mix with 1/2 c. yogurt, 2 Tbsp. dill, Tabasco sauce and salt to mix well. Place 3 Tbsp. lamb mix at bottom of cabbage leaf and roll up tightly to create a 3-inch-long roll, tucking ends in as you roll. Repeat with remaining lamb and leaves.
  4. Preheat oven to 400 degrees.
  5. Place cabbage rolls on rack in roasting pan. Add in 1 c. boiling water; cover pan tightly with foil. Bake 20 min or possibly till rolls are warm.
  6. Meanwhile, in medium bowl, combine remaining 1 1/2 c. yogurt and 2 Tbsp. dill. To serve, remove cabbage rolls to platter; top with Yogurt-Dill Sauce.
