Ingredients
- 500 gram baby marrow (courgettes)
- Stuffing:-
- 1 onion, chopped
- ¼ cup chopped almonds
- 6 mushrooms
- 2 tablespoons oil
- 1-tablespoon parsley
- 1 egg
- Seasoned bread crumbs
- 1-cup stock (soup cube)
- Salt
- Pepper
Directions
- Cook baby marrows and then slice lengthways and place in baking dish, cover with the following stuffing.
- Fry onion in oil till soft; add mushrooms, nuts, parsley and seasoning. When cooked add egg, crumbs and stock. The mixture should have a soft consistency. Top the cooked marrows with the stuffing and bake in the oven till brown.
