Ingredients
- 250 gm Fresh strawberries, trimmed and halved
- 2 Tbsp. Butter
- 3 Tbsp. Caster sugar
- 1 x Orange, juice of
- Â Â Splash of dark rum plus a little extra
- 3 Tbsp. Lemon curd
- 250 ml Double cream
- 4 x Pancakes
Directions
- Heat butter and sugar and add in the strawberries, orange juice and a dash of rum and cook briskly.
- Meanwhile, combine the curd, more rum and cream and whip till hard.
- To serve, place some of the strawberry fold in each pancake, fold and garnish with the cream.
