Ingredients

  • 250 gm Fresh strawberries, trimmed and halved
  • 2 Tbsp. Butter
  • 3 Tbsp. Caster sugar
  • 1 x Orange, juice of
  •     Splash of dark rum plus a little extra
  • 3 Tbsp. Lemon curd
  • 250 ml Double cream
  • 4 x Pancakes

Directions

  1. Heat butter and sugar and add in the strawberries, orange juice and a dash of rum and cook briskly.
  2. Meanwhile, combine the curd, more rum and cream and whip till hard.
  3. To serve, place some of the strawberry fold in each pancake, fold and garnish with the cream.
