- For the Graham Cracker Streusel Topping:
- 3 graham cracker sheets
- 2 tablespoons all-purpose flour
- 2 tablespoons light brown sugar
- 3 tablespoons unsalted butter, melted
- For the Cheesecake Filling:
- 2 ounces cream cheese, at room temperature
- 1 tablespoon granulated sugar
- 1 teaspoon lemon zest
- For the Muffins:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup canola oil or vegetable oil
- 1 large egg
- 1/3 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup chopped fresh strawberries

%20BUT%20I%20do%20love%20these%20Strawberry%20Cheesecake%20Muffins.%20I%20would%20choose%20these%20muffins%20over%20a%20piece%20of%20cheesecake%20any%20day!%3C/p%3E%3Cp%3ESo%20what%20is%20so%20good%20about%20these%20muffins?%20Let%E2%80%99s%20start%20with%20the%20mufifn%20part.%20The%20muffin%20batter%20is%20easy%20to%20whip%20up.%20You%20don%E2%80%99t%20even%20have%20to%20use%20your%20mixer.%20I%20fold%20in%20fresh%20chopped%20strawberries%20which%20add%20a%20nice%20pop%20of%20color%20and%20sweetness.%20And%20if%20you%20are%20stocking%20up%20on%20spring%20strawberries,%20like%20me,%20you%20probably%20have%20some%20to%20use%20up.%20And%20if%20you%20don%E2%80%99t%20go%20to%20the%20store%20ASAP!%20They%20are%20so%20good%20right%20now.%3C/p%3E%3Cp%3ENext,%20comes%20the%20cheesecake%20filling.%20I%20combine%20cream%20cheese%20with%20sugar%20and%20lemon%20zest.%20The%20cheesecake%20is%20a%20surprise%20inside%20of%20the%20muffins.%20You%20won%E2%80%99t%20know%20it%E2%80%99s%20there%20until%20you%20bite%20into%20the%20muffin.%20It%20is%20a%20pleasant%20surprise%20and%20this%20is%20coming%20from%20a%20cheesecake%20hater.%20Ok,%20maybe%20not%20a%20hater,%20that%20is%20a%20strong%20word%20and%20we%20are%20teaching%20Caleb%20to%20not%20say%20hate,%20so%20I%20better%20say%20cheesecake%20disliker:)%3C/p%3E%3Cp%3ESee,%20look%20at%20that%20cheesecake%20surprise!%20YUM!%3C/p%3E%3Cp%3ETo%20top%20the%20muffins%20off,%20I%20add%20a%20graham%20cracker%20streusel%20topping.%20Cheesecake%20traditionally%20comes%20with%20graham%20cracker%20crust,%20so%20to%20keep%20with%20tradition,%20I%20invited%20graham%20crackers%20to%20my%20muffin%20party.%20Best%20decision%20ever!%20The%20graham%20cracker%20streusel%20makes%20these%20muffins!%20Don%E2%80%99t%20skip%20the%20streusel%20part.%3C/p%3E%3Cp%3ESweet%20strawberry%20muffins,%20lemon%20cheesecake%20filling,%20graham%20cracker%20streusel%20topping%E2%80%A6these%20muffins%20have%20it%20ALL!%20And%20you%20can%20feel%20good%20about%20eating%20these%20cheesecake%20muffins%20for%20breakfast%20because%20they%20are%20muffins.%20They%20might%20taste%20like%20dessert,%20but%20muffins%20are%20muffins%20and%20that%20means%20breakfast!%3C/p%3E%3Cp%3EAnd%20guess%20who%20started%20feeling%20better%20as%20soon%20as%20the%20muffins%20came%20out%20of%20the%20oven.?%20Ha!%20Josh%20and%20Caleb%20were%20too%20sick%20to%20help%20me%20eat%20the%20strawberries,%20but%20they%20felt%20good%20enough%20to%20eat%20a%20Strawberry%20Cheesecake%20Muffins.%20It%E2%80%99s%20funny%20how%20that%20works:)%3C/p%3E%3Cp%3EI%20was%20actually%20happy%20to%20share%20my%20Strawberry%20Cheesecake%20Muffins%20because%20if%20they%20didn%E2%80%99t%20help%20me%20eat%20them%20I%20probably%20would%20have%20eaten%20the%20entire%20batch.%20Remember,%20I%20don%E2%80%99t%20like%20to%20waste%20beautiful%20berries%20and%20that%20includes%20beautiful%20berries%20inside%20of%20delicious%20muffins!%3C/p%3E%3Cp%3ESo,%20I%20will%20probably%20still%20never%20order%20cheesecake%20for%20dessert,%20but%20I%20will%20be%20making%20these%20Strawberry%20Cheesecake%20Muffins%20again!%20They%20are%20a%20new%20favorite!%3C/p%3E%3Cp%3EStrawberry%20Cheesecake%20Muffins%3C/p%3E%3Cp%3EYield:%209%20muffins%3C/p%3E%3Cp%3EPrep%20Time:%2020%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2018-20%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%2040%20minutes%3C/p%3E%3Cp%3EStrawberry%20muffins%20with%20a%20cheesecake%20filling%20and%20graham%20cracker%20streusel%20topping!%20These%20muffins%20are%20meant%20for%20breakfast,%20but%20good%20enough%20to%20be%20dessert!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees.%20Line%209%20cups%20of%20a%20muffin%20tin%20with%20paper%20liners%20or%20grease%20well.%20Set%20aside.%3C/p%3E%3Cp%3E2.%20First,%20make%20the%20streusel%20topping.%20Place%20the%20graham%20crackers%20in%20a%20Ziploc%20bag%20and%20seal.%20Using%20a%20rolling%20pin%20or%20other%20heavy%20object,%20crush%20the%20graham%20crackers.%20I%20like%20to%20leave%20a%20few%20bigger%20chunks%20to%20give%20the%20streusel%20texture.%20In%20a%20small%20bowl,%20combine%20graham%20cracker%20crumbs,%20flour,%20brown%20sugar,%20and%20melted%20butter.%20Stir%20until%20moistened.%20Set%20aside.%3C/p%3E%3Cp%3E3.%20Next,%20make%20the%20cheesecake%20fililng.%20In%20a%20small%20bowl,%20stir%20together%20cream%20cheese,%20sugar,%20and%20lemon%20zest.%20Set%20aside.%3C/p%3E%3Cp%3E4.%20In%20a%20medium%20bowl,%20whisk%20together%20the%20flour,%20baking%20powder,%20salt,%20and%20sugar.%3C/p%3E%3Cp%3E5.%20In%20a%20small%20bowl,%20combine%20canola%20oil,%20egg,%20buttermilk,%20and%20vanilla%20together.%20Whisk%20until%20well%20combined.%3C/p%3E%3Cp%3E6.%20Incorporate%20the%20wet%20ingredients%20into%20flour%20mixture.%20Add%20slowly%20and%20gently%20stir,%20you%20don%E2%80%99t%20want%20to%20over%20mix.%20The%20batter%20will%20be%20thick.%20Carefully%20fold%20in%20the%20strawberries.%3C/p%3E%3Cp%3E7.%20Fill%20each%20muffin%20cup%20with%20about%201%20he
