Stove-top Grilled Eggplant Recipe

This is a traditional eggplant recipe that most Filipinos enjoy to share at home. Most of the time this is paired with salted egg with tomatoes.

Ingredients

  • 3 pcs Talong (eggplant)
  • Dipping sauce:
  • soysauce with calamansi (Philippine Lime)
  • Some like to use vinegar or bagoong

Directions

  1. Pre-heat the grilling pan.
  2. Slice the eggplants lengthwise. Some prefer it whole, it will just take a bit longer to grill.
  3. Place in grill pan.
  4. Turn them every 3-5 minutes) careful not to burn the eggplants.
  5. Place the grilled eggplants on a plate.
  6. Serve with soy sauce with calamansi. Chili is optional.
