Ingredients
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. finely-chopped onions
- 1 Tbsp. curry pwdr
- 1 x apple peeled, cored,
- Â Â and cut into small cubes
- 1 c. minced mushrooms
- 1/4 c. sun-dry cherries
- 1Â 1/2 c. cooked wild rice
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Directions
- Heat saute/fry pan. Add in extra virgin olive oil and saute/fry chopped onions and curry pwdr till translucent/soft. Add in minced apple, mushrooms and sun-dry cherries and cook till mushrooms are cooked through.
- Add in cooked wild rice and stir-fry till rice is warm and tender. Add in salt and pepper to taste.
- This recipe yields 2 servings.
- Comments: This dish is a dish which can be served year round, even during the holidays. It has a variety of flavors. The recipe is a great accompaniment for meat, fish or possibly poultry dishes. The addition of curry pwdr goes great with the fruit and the onion.
