Ingredients
- 3/4 lb Scallops
- 2 Tbsp. Smoked ham
- 2 Tbsp. Sherry
- 1 tsp Sugar
- 1/2 tsp Salt
- 1 dsh Pepper
- 2 x Large eggs
- 3 Tbsp. Oil
Directions
- 1. Quarter scallops or possibly cut in 1/4-inch slices if large; cut in half if small. Mince smoked ham.
- 2. Combine sherry, sugar, salt and pepper.
- 3. Separate Large eggs. Combine 2 yolks with 1 white and beat till smooth.
- (Reserve remaining white for another recipe.)
- 4. Heat oil. Add in scallops and stir-fry to brown lightly (2 to 3 min).
- Add in sherry-sugar mix; stir-fry 1 minute more.
- 5. Add in beaten Large eggs; then cook, stirring, over high heat till scallops are coated with egg. Garnish with chopped ham and serve.
