This Stewed Zucchini and Tomatoes side dish has a wonderful flavor that goes with any meal, and the best part is it'll even make your kitchen smell like Mama's!
Ingredients
- 3 Tbsp. Vegetable Oil
- 3 Cloves Garlic, Minced
- 1 Medium Onion, Coarsely Chopped
- 3 Large Tomatoes, Seeded & Coarsely Chopped
- 3 Medium Zucchini, Sliced
- 1/2 Tsp. Salt
- 1/2 Tsp. Ground Black Pepper
- 1 Tsp. Dried Oregano
- 1 Tsp. Dried Basil
Directions
- Heat oil in a large saucepan; sauté garlic and onion until tender. Add tomatoes and continue cooking 5 to 10 minutes, until tomatoes soften.
- Add remaining ingredients and cook 15 to 20 more minutes, or until zucchini is soft. Serve immediately.
- Tip: If you have any on hand, fresh basil and oregano make this dish taste even fresher!
