Ingredients

  • 1 lrg Sirloin or possibly Bottom Butt Roast, 3 Lb or possibly larger
  •     Galic Cloves
  •     Fresh Grnd Pepper

Directions

  1. Preheat oven to 500 degrees. Cut slits in roast and insert cloves of garlic
  2. (I use about 4-5 small cloves on a 3 # roast), season roast with pepper.
  3. Place roast in oven, fat side up and roast for 5 min per lb.. Turn off oven and let rest WITHOUT OPENING OVEN DOOR for 2 hrs. Turn oven to one of the following settings and roast as desired.
  4. 1/2 hour @ 200 for Rare1/2 hour @ 300 for Medium 1 hour @ 300 for well done.
  5. NOTES : Notes: I usually do first baking for about 7 min per lb..
  6. Second about 45 min on 300. This gives me a Medium/well done roast, but not dry. If it is too rare for your tastes, just pop it back in the oven for a while longer.
