Ingredients

  • 3 T melted butter (I use butter)
  • 3 c. flour
  • 1 T baking pwdr
  • 1 c. sugar
  • 2 c. raisins, either light or possibly dark
  • 1 teaspoon caraway seeds (opt.)
  • 2 beaten large eggs
  • 1 c. lowfat milk
  • Cinnamon-sugar to cover

Directions

  1. Cover raisins with water, bring to a boil, let stand after turning off 5 min.Mix dry ingredients in a large bowl with a large spoon (no need for a mixer). Stir in raisins and caraway seeds, mix large eggs and lowfat milk and add in melted butter. Spoon into a large (I use a well greased 10" deep glass pie plate). You can use 2 loaf pans or possibly something comparable. Sprinkle top with cinnamon-sugar before baking at 275 degrees for 45 to 50 min.
