Spiralized Thai Cucumber Salad

This Spiralized Thai Cucumber Salad is the perfect refreshing accompaniment to any Thai dish, and is especially delicious served with satay or rich curries. Affiliate links have been used to link to items that I am discussing–and that I love or I would not recommend them!
I did it! I got my butt in the kitchen, I cooked some food and took photographs, I joined the hordes and bought and used a spiralizer, and I finally unpacked the last of the boxes that were packed by professional movers way back in Pennsylvania when Sammy was about 8 months old.

%20boxes%20were%20not%20unpacked%20at%20all%20for%20the%20short%20term%20stays%20in%20different%20houses.%20And%20then%20by%20the%20time%20we%20got%20here,%20it%20just%20felt%20like%20we%20had%20learned%20to%20live%20without%20whatever%20was%20in%20the%20boxes%20for%20so%20long%20it%20didn%E2%80%99t%20feel%20pressing%E2%80%A6%3C/p%3E%3Cp%3ESo%20what%20started%20pressing?%20Meet%20Persephone!%3C/p%3E%3Cp%3EI%20am%20super%20excited%20to%20tell%20you%20all%20about%20her,%20but%20I%20am%20going%20to%20save%20most%20of%20it%20for%20a%20later%20post,%20involving%20cats%20in%20Italy.%20And%20no%20she%20didn%E2%80%99t%20come%20from%20Italy.%20But%20anyway,%20much%20like%20her%20namesake%20she%20will%20be%20dividing%20her%20time%20between%20up%20with%20us%20and%20the%20basement%20(primarily%20because%20I%20have%20serious%20issues%20with%20cats%20on%20the%20counter%20and%20a%20lot%20of%20family%20members%20with%20allergies,%20including%20me!).%20This%20meant%20getting%20the%20basement%20clean%E2%80%93which%20meant%20hauling%20those%20boxes%20upstairs%20and%20checking%20them%20out.%3C/p%3E%3Cp%3EWhat%20a%20treasure%20trove%20of%20food%20photography%20props!%20Ha!%20And%20several%20long%20lost%20items%20I%20have%20been%20searching%20for.%20And%20of%20course%20some%20items%20that%20will%20be%20donated%20to%20Good%20Will.%20And%20a%20lot%20of%20paper%20to%20throw%20away%E2%80%93have%20you%20seen%20the%20way%20professional%20movers%20pack%20things!?%3C/p%3E%3Cp%3EAnyway.%20Back%20to%20the%20other%20stuff%20I%20am%20excited%20about.%20I%20decided%20somewhere%20near%20the%20end%20of%20my%20time%20in%20Italy%20that%20I%20was%20going%20to%20take%20the%20plunge%20and%20buy%20a%20spiralizer.%20What%20decided%20me?%20Carrot%20thread%20(noodles)%20salads!%20That%20texture%20just%20sounds%20awesome%20to%20me.%20I%20don%E2%80%99t%20know%20how%20sold%20I%20am%20on%20the%20whole%20noodle%20substitute%20angle.%20But%20I%20love%20the%20idea%20of%20it%20for%20salads!%20Or%20just%20for%20the%20sake%20of%20the%20texture%20that%20is%20created%20by%20the%20threads.%20After%20hemming%20and%20hawing,%20I%20went%20with%20the%20Paderno%20World%20Cuisine%20Spiralizer%20Pro,%204-Blade%3C/p%3E%3Cp%3E,%20primarily%20because%20I%20am%20in%20love%20with%20the%20idea%20of%20the%20angel%20hair%20blade,%20which%20only%20comes%20in%20the%20%E2%80%9CPro%E2%80%9D%20version.%3C/p%3E%3Cp%3EI%20started%20with%20a%20thicker%20%E2%80%9Cnoodle,%E2%80%9D%20figuring%20it%20might%20be%20easier,%20for%20this%20salad.%20The%20Thai%20Cucumber%20Salad%20itself%20is%20technically%20a%20redux,%20but%20it%20was%20on%20my%20blog%20so%20long%20ago%20I%20actually%20thought%20the%20occasional%20post%20without%20pictures%20was%20acceptable.%20And%20once%20upon%20a%20time%20I%20swear%20it%20was%20not%20nearly%20as%20gauche%20as%20it%20feels%20now!%20Traditionally%20I%20have%20always%20made%20this%20salad%20(I%20make%20it%20frequently)%20with%20thinly%20sliced%20cucumber%E2%80%93but%20another%20benefit%20to%20the%20spiralizer%E2%80%93or%20a%20mandolin%E2%80%93is%20that%20it%20gets%20the%20slices%20super%20thin,%20which%20in%20turn%20gives%20you%20more%20surface%20area%20for%20the%20delicious%20dressing%20to%20cling%20to.%20The%20dressing%20itself%20is%20nothing%20unusual,%20but%20it%20is%20traditionally%20Thai%20and%20that%20is%20where%20I%20learned%20to%20love%20it.%3C/p%3E%3Cp%3EI%20first%20made%20this%20recipe%20eons%20ago%20from%20Nancie%20McDermott%E2%80%99s%20excellent%20Real%20Thai:%20The%20Best%20of%20Thailand%E2%80%99s%20Regional%20Cooking%3C/p%3E%3Cp%3E,%20but%20it%20has%20been%20so%20long%20since%20I%20even%20consulted%20the%20book%20that%20I%20could%20not%20tell%20you%20how%20much%20my%20recipe%20is%20adapted.%20As%20you%20will%20see,%20the%20recipe%20is%20super%20simple!%3C/p%3E%3Cp%3ESpiralized%20Thai%20Cucumber%20Salad%20%20%20Adapted%20from%20Nancie%20McDermott.%20%20Author:%20TheSpicedLife%20Recipe%20type:%20salad%20Cuisine:%20Thai%20%20%20Ingredients%3C/p%3E%3Cp%3E1%20cup%20water%201%20cup%20white%20vinegar%201%20cup%20granulated%20sugar%201%20pinch%20of%20salt%203%20English%20cucumbers,%20spiralized%20(or%20thinly%20sliced)%201%20red%20onion,%20spiralized%20(or%20finely%20chopped),%20or%20equivalent%20of%20shallots%20Small%20handful%20(approx.%20%C2%BD%20cup)%20cilantro,%20roughly%20chopped%20%20%20Instructions%3C/p%3E%3Cp%3EBring%20the%20water,%20vinegar,%20sugar%20and%20salt%20to%20a%20boil%20and%20then%20remove%20from%20heat,%20stirring%20to%20dissolve%20the%20sugar.%20Set%20aside%20to%20cool%20completely.%20After%20the%20dressing%20has%20cooled,%20toss%20all%20ingredients%20together%20and%20serve.%20It%20can%20be%20made%20ahead%20by%20a%20few%20hours%20and%20left%20to%20chill,%20covered,%20in%20the%20fridge.%20When%20I%20make%20this,%20I%20often%20keep%20adding%20more%20cucumber%20to%20the%20dressing%20(it%20will%20be%20quite%20liquid-y,%20it%20is%20really%20more%20of%20a%20pickle%20in%20some%20ways)%20as%20the%20days%20go%20by%20to%20have%20excellent%20le
