Spinich and bacon quiche Recipe

Servings: 2 9 inch pies


  • 8 eggs
  • 2 C. shredded swiss cheese
  • 1 C. shredded medium chedder
  • 1 1/2 C. cream
  • 1 1/2 C. milk
  • 1 box frozen chopped spinich
  • thick sliced maple bacon
  • onion
  • celery
  • Pillsbury pie crust
  • white wine and butter for sauteing onion and celery


  1. fry bacon until crispy and set aside
  2. saute onion and celery in white wine and butter
  3. defrost and drain spinich
  4. mix all ingredients and pour into shells
  5. bake at 375 for 45 min. or until knife comes out clean.

        Thanks for sharing this, Holly. We haven't tried it yet, but I know you're a great cook, so I'm adding it to a theme on brunches. Hopefully a few more folks will try and review it!
