Ingredients

  • 1 pkt Large macaroni shells
  • 1 sm Onion, minced
  • 10 ounce Frzn minced Spinach
  • 1 Tbsp. Instant Chicken bullion
  • 1/2 tsp Garlic pwdr
  • 1/8 tsp Dry thyme
  • 1 1/2 c. Low-fat ricotta cheese
  • 1 c. Low-fat cottage cheese
  • 2 x Large eggs
  • 48 ounce Jar spaghetti sauce
  • 8 ounce Shredded mozzarella cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Cook spinach as directed on package; drain well.
  3. Cook shells as directed; drain, cold.
  4. In a large bowl, mix minced onion, chicken bullion, garlic pwdr, thyme, ricotta cheese, cottage cheese, Large eggs, and cooked spinach.
  5. Using your hands and a large spoon, stuff shells with the mix, and lay in rows in a 13" x 9" baking pan.
  6. Spread spaghetti sauce over the shells in the pan. Sprinkle shredded mozzarella on top.
  7. Bake at 350 degrees for 25 - 35 min, till hot in the center, and mozzarella cheese has melted.
