Spinach Root Salad (Ispanak Koku Salatasi)

Ingredients

  • 1 lb young spinach roots and stems washed well
  • 3 Tbsp. extra-virgin extra virgin olive oil
  • 1 Tbsp. lemon juice
  • 1 lrg garlic clove finely minced
  • 1 tsp poppy seeds optional
  • 1 tsp honey optional
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Bring some water to a boil in a saucepan and cook the spinach roots and stems till they are soft, about 20 min. Drain and refresh them under cool water. Pat them dry with paper towels and set aside.
  2. Whisk together the extra virgin olive oil, lemon juice, garlic, poppy seeds and honey, if using. Combine the dressing with the spinach roots and stems and toss. Season with salt and pepper to taste and serve.
  3. This recipe yields 4 servings.
