  • 3 lb spinach cleaned
  • 1 pch cinnamon
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 Tbsp. melted butter plus
  •     more for greasing casserole
  • 3 x beaten Large eggs
  • 1/2 c. freshly-grated pecorino Romano

Directions

  1. Preheat the oven to 375 degrees.
  2. Bring 6 qts of water to a boil and add in 2 Tbsp. salt. Add in the spinach and cook for 30 seconds, till just limp, then drain, squeeze out the excess moisture, and chop finely.
  3. Place the spinach in the bowl of a food processor and puree with the cinnamon, salt, and pepper. Turn the puree out into a bowl and stir in the butter, Large eggs, and cheese and stir well.
  4. Turn the mix into a well-buttered casserole and cook in the oven for 15 to 25 min, till the Large eggs are set and the top is golden. Serve warm, in wedges.
  5. This recipe yields 6 servings.
