Directions

  1. Hard boil the Large eggs (simmer about 10 minutes). Remove yolks from whites. Chop whites coarsely.
  2. Mix egg yolks, extra virgin olive oil, celery seed and Dijon mustard to make a dressing for salad.
  3. Heat bacon grease until it just about smokes and add in red wine vinegar. Add in minced whites .
  4. Pour over salad, add in cut up bacon, toss and serve and serve on a bed of fresh spinach.
