Delicious side dish combining chopped spinach with a Parmesan cheese sauce.

Directions

  1. Heat oven to 375 F.
  2. Press thawed spinach between paper towels to remove moisture.
  3. Melt butter in a saucepan, add onions. Saute a few minutes over medium low heat. Remove from the heat.
  4. Add flour to the sour cream.
  5. Beat eggs with 1/2 of the cheese, Parmesan, and half and half in a bowl. Add all other ingredients, combine.
  6. Pour into a greased 8 " baking pan, or 1 1/2 qt. baking dish.
  7. Bake 45-50 minutes.
  8. Top with Italian cheese and paprika, turn off the oven.
  9. Remove in 5 minutes, let stand a few minutes before serving.
