Spinach and Feta Stuffed Chicken Recipe

This was so absolutely delicious! I will definitely be making this again!

Ingredients

  • Chicken. I used scalopini I bought at the store and just folded it around the mix, you could also split a full breast and stuff them, or you could even use thighs if you prefer. You need 4 of whatever you decide.
  • 3/4 cup crumbled feta
  • 1/2 cup thawed frozen chopped spinach, squeezed dry (or you could use fresh, chopped well)
  • 3 tablespoons cream cheese, room temperature
  • 1/4 cup chopped green onions
  • 1 T minced garlic
  • olive oil
  • salt and pepper

Directions

  1. Mix together the feta, spinach, cream cheese.
  2. Stir in the green onions, garlic and salt and pepper to taste.
  3. Split the mix evenly between the 4 pieces of chicken and stuff or fold accordingly.
  4. Season the outside with salt and pepper.
  5. Heat a few tablespoons of olive oil in a skillet.
  6. Brown the outside for a few minutes on each side and finish in the oven.
  7. The cooking time will vary depending on which style of chicken you use. Make sure the center of the thickest part of the chicken is measuring at least 165 on a thermometer before serving.
