Ingredients
- For the chicken:
- 3 Tablespoons olive oil
- 1 onion, chopped
- 6 cloves of garlic, minced
- 2 carrots, peeled and sliced
- 4 celery stalks, sliced
- 3 jalapenos, diced
- 1 whole chicken, cut up, cleaned and rinsed
- 12 cups of Swanson® Unsalted Chicken Broth
- 2 cans diced tomatoes
- 2 bay leaves
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1 bunch of cilantro, chopped
- Juice of one lime
- 1/2 cup of cream
- Salt, black pepper, cayenne and cumin to taste
- For the cornmeal dumplings:
- 1 cup cornmeal
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup buttermilk
- 1 Tablespoon melted butter
- 1 jalapeno, finely diced
- 2 Tablespoons of minced cilantro
- For Garnish:
- Sour Cream
- Salsa
- Chopped Cilantro
