Spicy Gorgonzola-Pine Nut-Herb Butter Recipe

This is killer on Steaks or Filet Mignon grilled outdoors.Serve on meat at room temperature.

Sometimes I use this recipe on bake potatoes.
As a spread on french bread I bake in foil in the oven.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup crumbled Gorgonzola or other herb soft cheese.
  • 3 Tbls of fresh thyme, minced.
  • 2 Tbls fresh rosemary, minced.
  • 2 Tbls fresh Italian parsley, minced.
  • 1 Tsp crushed red pepper flakes
  • 2 garlic cloves
  • 1/2 cup pine nuts
  • Kosher salt and freshly ground pepper
  • This is enough to use on 8 8 ounce beef tenderloin filets.

Directions

  1. Preheat you outdoor grill for medium to high heat.
  2. Place the softened buter, Gorgonzola cheese, thyme, rosemary, parsley, red pepper flakes, garlic and pine nutes into a bowl of a food processor. Puree until incorporated, taste, then season to taste with salt and pepper.
  3. Season the steaks on all sides with salt and cracked pepper.
  4. Grill to desired doneness.
