Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 large sweet onion diced
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 1 teaspoon red pepper flakes (more or less to taste)
  • 2-3 skinless, boneless chicken breasts cut in 1-2 inch squares
  • 1/2 cup white wine
  • 1/4 cup vodka (you can omit if you like)
  • 1 pound cherry tomatoes (you could used diced/canned in necessary)
  • 1/2 cup fresh parsley chopped fine
  • kosher salt to taste
