  • 1 package (6 oz.) Canadian Bacon, sliced
  • 4 eggs
  • 1/4 cup cilantro, stems removed, loosely packed
  • 1/4 cup heavy cream
  • 1 large or 2 small green onions, finely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup Pepperjack cheese, shredded
  • 1 large jalapeno, cut into 12 thin slices
  • Special equipment: 4 1/2-inch round cookie cutter and a 2 1/2-inch round cookie cutter
