Directions

  1. Preheat oven to 300 degrees
  2. Line a sheet pan with a silpat or other nonstick silicone baking mat, or parchment paper
  3. In a large bowl , beat egg white until soft peaks form and stir in the 1 Tbl of melted butter
  4. Add walnuts and toss gently until well coated
  5. In a medium bowl combine the sugars, cinnamon, kosher salt and cayenne red pepper mix till well combined
  6. Sprinkle over the walnuts and mix gently until the nuts are evenly coated
  7. Spread nuts in a single layer on the baking sheet
  8. Bake stirring every 10 minutes until golden brown about 45 minutes total
  9. Place hot baking sheet on a cooling rack and let cool completely
  10. The cooled nuts will keep in a airtight container for up to 1 week , but are best when fresh
