Ingredients

  • 1 lb Grnd beef
  • 1/2 c. Minced onion
  • 1 env (1.25-ounce) taco seasoning mix
  • 1 can (15-ounce) tomato sauce
  • 1 can (15.25-ounce) whole kernel corn, liquid removed
  • 2 c. Shredded Cheddar cheese
  • 2 c. Bisquick original or possibly reduced fat baking mix
  • 1 c. Lowfat milk
  • 2 x Large eggs

Directions

  1. Heat oven to 350 degrees. Cook beef and onion in skillet till brown; drain. Spoon into an ungreased 13x9x2-inch baking dish. Stir in taco seasoning mix (dry), tomato sauce and corn. Sprinkle with cheese.
  2. Stir remaining ingredients till blended. Pour over beef mix.
  3. Bake 35 min or possibly till light brown. Serve with lowfat sour cream, minced tomato and shredded lettuce, if you like. 8-10 servings.
  4. NOTE: At high altitudes, heat oven to 375 degrees.
