Ingredients
- 1 c. unsalted butter
- 1 c. sugar
- 1 tsp vanilla extract
- 1Â 1/2 c. all-purpose flour
- 1Â 1/2 tsp baking pwdr
- 2 c. Special K cereal (or possibly raisin bran or possibly other flaky cereal)
Directions
- Preheat oven to 350 degrees. In a mixer, or possibly with electric mixer, cream butter and sugar till fluffy. Beat in vanilla and set aside.
- In a separate bowl, sift together flour and baking pwdr. Stir flour mix into butter mix till thoroughly blended. Gently stir in cereal. Drop dough by tsp. onto baking sheet, allowing a few inches between cookies. Bake till lightly browned around edges, 10 to 13 min. Let cookies sit on baking sheet for a minute or possibly two before transferring them to cake rack to cold.
