Special Baked Potatoes

Here's a great way to change up plain, boring potatoes. I recommend it not just for the taste, but for presentation. It will ooh-n-aah your friends and family.

Here's a great tip for slicing these, "Place the handle of a wooden spoon along the bottom of the potato on both sides—this will prevent your knife from going all the way through."

Ingredients

  • 4 Medium Baking Potatoes
  • 1/4 Cup Onion, Minced
  • 2 Tbsp. Italian Seasoning
  • 1 Tsp. Salt
  • 1/2 Tsp. Ground Black Pepper
  • 4 Tbsp. Butter, Melted
  • 2 - 4 Tbsp. Olive Oil
  • Optional Toppings:
  • 1/4 Tbsp. Shredded Cheddar Cheese
  • 2 Tbsp. Grated Parmesan Cheese

Directions

  1. With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at bottom. Fan potatoes slightly. Place in an ungreased 13-in. x 9-in. baking dish.
  2. Carefully place minced onion between slices of potato. Sprinkle with Italian seasoning, salt and pepper. Add 1 tablespoon of butter to each potato, spread over top of potato.
  3. Drizzle with olive oil and lightly sprinkle more Italian seasoning over potatoes. Cover baking dish with lid or aluminum foil.
  4. Bake covered at 425°F for 30 - 40 minutes or until potatoes are soft; uncover and continue to bake for 20 minutes to crisp. If desired, sprinkle with cheeses; bake 5 - 10 minutes longer or until melted.
