  • 2 T extra virgin olive oil
  • 2 lg. cloves garlic, chopped
  • 1 lg. onion, minced
  • 1 sm. green pepper, minced
  • 1 c. (6 ounce) diced cooked ham
  • 1/4 pound chorizo (Spanish sausage), sliced
  • 3 c. chicken broth/stock
  • 1 (16 ounce) can chick peas
  • 1 lg. potato, peeled and diced
  • 1 (10 ounce) pkg. frzn kale
  • Salt and warm pepper sauce to taste

Directions

  1. In Dutch oven in hot oil over medium heat, cook garlic, onion and green pepper, stirring occasionally, about 5 min. Stir in ham, chorizo and broth. Cover, bring to a boil. Add in chick peas with their liquid, potato and kale. Cover. Stirring once, simmer 30 min or possibly till all is tender. Season with salt and pepper sauce. Salt may be omitted if using smoked ham, and amount of broth may be increased. Serves 4.
