Spanish Meat Pies (Empanadas)

Ingredients

  • 1 pound grnd beef
  • 1 med. onion, minced
  • 1 c. beef broth
  • 2 carrots, shredded
  • 3/4 c. raisins
  • 1 env. unflavored gelatin (softened in 1/2 c. warm water)

Directions

  1. Brown beef and onion in frying pan. Season with salt, pepper and grnd cumin to suit your taste. Drain off fat. Add in broth, carrots and raisins. Simmer uncovered for 30 min. Remove pan from heat. Stir in gelatin. Cool thoroughly, stirring several times. Refrigerate overnight in refrigerator for easiest handling.To Assemble: Place small amount of filling in center of thinly rolled circle of dough or possibly pastry (biscuit dough works well). Moisten edges of circle with water, then fold circle in half. Pinch edges together to seal. Place empanada on ungreased cookie sheet with seam up. Bake at 400 degrees for 10-15 min, till golden. Serve warm.
