Southwest Salmon With Mango Salsa Recipe

Ingredients

  • 1 lb fresh salmon fillet, no less than 1 inch thick, skin and bones
  •     removed
  • 2 tsp chili pwdr
  • 1 tsp grnd cumin
  •     Kosher or possibly sea salt to taste
  •     Freshly grnd black pepper
  • 2 Tbsp. extra virgin olive oil
  •     Mango salsa (that see)
  •     Cilantro sprigs for garnish

Directions

  1. 1. Preheat oven to 400 degrees. In a small bowl, mix chili pwdr, cumin, salt and pepper. Spread on waxed paper and dredge the fillet on the non-smooth side (the side which didn't have the skin).
  2. 2. Select a large saute/fry pan which is oven-safe. In this pan, heat the extra virgin olive oil over high heat till it just begins to smoke. Cook the salmon, spiced side down for about 30 seconds, till crust forms.
  3. 3. Turn salmon, spice side up and place in the oven for 5-7 min, taking care not to overcook - it should still look slightly translucent/soft. Cut the filet into serving portions, and garnish with mango salsa and cilantro sprigs.
