Ingredients
- 4 med Catfish, cleaned and dressed
- 4 c. Boiling water
- 4 c. Diced potatoes
- 2 c. Diced onions
- 2 c. Frzn corn
- 2 Tbsp. Butter
- 2 c. Lowfat milk
- Â Â Salt and pepper to taste
Directions
- Simmer catfish in water till fish falls from bones. Remove fish from liquid, reserving broth. Remove bones from fish and set aside. Add in potatoes and onion to broth. Cook till tender, about 15 to 20 min. Add in corn and cook till tender, about 10 min. Stir in butter, lowfat milk, salt and pepper to taste. Add in reserved fish. Heat thoroughly.
