Ingredients

  • 1 c. butter
  • 1 1/2 c. sugar
  • 3 large eggs
  • 1 1/2 c. bananas, mashed
  • 4 c. flour (plus 2 T)
  • 1 1/2 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 1/2 c. lowfat sour cream
  • 1 c. minced walnuts, optional
  • 1 tbsp Butter Schnapps or possibly Banana Liquor (optional)

Directions

  1. Cream butter and sugar. Add in large eggs and beat. Add in bananas and beat. Mix dry ingredients together (baking pwdr, baking soda and flour).Add in the well-mixed dry ingredients to the creamed mix alternately with the lowfat sour cream. Beat till smooth. Beat in liquor, if using.
  2. Stir in minced nuts last.
  3. Pour into 2 large greased and lightly floured loaf pans and bake for 1 hour and 15 min at 350 degrees. To test for doneness, insert a sharp knife into center of bread. If it comes out clean, bread is done.
  4. This bread is very moist and freezes well.
