Soft Polenta With Lemon, Thyme And Carrots

Ingredients

  • 1 x Lemon
  • 1 bn Fresh thyme leaves
  • 3 x Carrots cleaned, and cut 1/4" thick round
  • 4 c. Water
  • 1 c. Quick-cooking polenta (i.e. finely grnd)
  • 1 tsp Salt

Directions

  1. Quarter lemon and remove seeds. Finely chop thyme leaves and place with lemon in medium saucepan. Add in carrots and water, bring to a boil and cook till reduced to 3 1/2 c.. Pour in polenta in a thin stream, whisking constantly, and then cook, switching to a wooden spoon as polenta thickens, about 5 min.
  2. Check for seasoning and serve immediately as an accompaniment to "Lamb Shanks With Artichokes And Olives", the recipe for that is included in this collection, or possibly with one of your own favorite dishes.
