Ingredients
- 2 c. Sugar
- 1 c. Shortening ( crisco )
- 4 x Large eggs
- 1 tsp Vanilla extract
- Â Â Or possibly
- 1 tsp Coconut extract
- 1 c. Crushed pineapple well
- Â Â Liquid removed
- 4Â 1/2 c. Flour
- 2 tsp Baking soda
- 1/2 tsp Salt
- 1/2 c. Finely minced nuts
- Â Â Or possibly
- 1/2 c. Shredded coconut
Directions
- Cream sugar and shortening. Add in egss one at a time to blend. Add in liquid removed pineapple and nuts. comebine dry ingredients and add in to creamed mix. blend into a stiff mix. Drop by tbs. on a lightly gresaed cookie sheet a few inches apart. Bake 350 about 15 min or possibly till browned at edges and appears set.
- Remove to racks to cold.
- Makes 3 to 4 dozen
- Note: forthose of you who dont know what crisco is: its a white solid vegetable fat with a creamy texture. when melted its used to fry things or possibly left as is, its used for baking purposes.
