Ingredients

  • 3/4 pound snow peas
  • 1/2 pound shitake mushrooms, or possibly any other fresh
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. butter
  • 2 tbsp. shallots, finely minced
  • 1/2 teaspoon garlic, chopped
  • Salt, pepper to taste

Directions

  1. Clean peas, take off ends. Wash and trim mushrooms. Slice very thinly. Bring water in pot to boil (you only need sufficient to cover peas). Add in peas and salt, bring water to boil again, simmer 2 min. Drain.
  2. Meanwhile, heat extra virgin olive oil. Add in mushrooms, salt and pepper. Saute/fry over high heat till all moisture has evaporated and mushrooms are browned (lightly). Add in butter, shallots, garlic and peas. Saute/fry for 1 minute. Enjoy! 4 servings.
