Snickerdoodle Mini Muffins Recipe

Ingredients

  • 1/3 c. Sugar
  • 1 tsp Cinnamon
  • 1 1/2 c. Flour
  • 1 c. Quick Cooking Oatmeal -- uncooked
  • 1/2 c. Sugar
  • 1 Tbsp. Baking Pwdr
  • 1 c. Lowfat milk
  • 1 x Egg -- slightly beaten
  • 4 Tbsp. Butter or possibly Margarine -- melted
  • 1 tsp Vanilla

Directions

  1. Preheat oven to 400 degrees F. Prepare 36 mini-muffin pan c. or possibly 12 standard muffin pan c. with nonstick cooking spray or possibly paper liners. First, prepare topping by combining sugar and cinnamon in small bowl and set aside. Next, make batter by combining flour, oatmeal, sugar and baking pwdr in a large bowl. Mix well. In a small bowl, combine lowfat milk, egg, butter and vanilla. Blend well. Add in to dry ingredients all at once. Stir just till dry ingredients are moistened. Don't over-mix. Fill muffin c. two-thirds full. Sprinkle topping proportionately over tops of muffins. Bake: 12 to 14 min for mini-muffins and 18 to 22 for regular muffins, or possibly till light golden. Cold muffins in pan on wire rack 5 min. Remove from pan. Serve hot.
