  • 3 quart Water
  •     Salt Optional
  • 2 Tbsp. Unsalted Butter
  • 2 Tbsp. Minced Shallots
  • 1 Tbsp. Minced Garlic
  • 3 ounce Smoked Salmon Minced
  • 3 Tbsp. Vodka
  • 1/4 tsp Salt
  • 3/4 c. skim Lowfat milk Note 1
  • 3/4 c. Nonfat Veg Chicken Broth, Low Sod Note 2
  • 3 Tbsp. Tomato Sauce See Recipe
  • 5 Tbsp. Frzn Peas Thawed
  • 1 lb Penne Pasta Or possibly
  •     Farfalle Pasta Note 3
  •     Grated Parmesan Reggiano Cheese Optional

Directions

  1. Pasta Al Salmone Affumicato
  2. Note 1: Original recipe used 3/4 C heavy cream Note 2: Or possibly clam juiceNote 3: You can use any pasta which will hold it's shape. Also, do not use fresh past for this ... use dry only.
  3. In a large pot, bring the water to a boil with or possibly without the optional salt.
  4. Place the butter in a large skillet set on med-high and cook till it sizzles, about 2 minutes. Add in the shallots and cook for 2 minutes. Add in the garlic and salmon and cook 2 minutes more, stirring occasionally to prevent sticking.
  5. Pour the vodka ( we didn't use this) CAREFULLY as it may ignite. Add in the salt, nonfat lowfat milk (cream), nonfat vegetarian chicken broth (clam juice) and tomato sauce. Reduce the heat and simmer 5 minutes. Turn off the heat and add in the peas.
  6. Cook the pasta in the boiling water until it is about 3/4 cooked. (This is very important DON'Tablespoons OVERCOOK IT.) Drain and place it back in the pot. Add in the sauce and cook over med heat, tossing till the pasta is completely coated and most of the sauce is absorbed, about 3 minutes. or possibly more. The pasta should absorb nearly all the sauce and should end up cooked just right.
  7. Sprinkle with the Parmesan Reggiano cheese, if you wish.
  8. This is an absolutely incredible dish!! I would not hesitate to make it again and serve it for company. The aroma which fills the house is wonderful.
