,%20and%20setting%20up%20photography%20lights%20is%20a%20huge%20hassle.%20Second,%20I'm%20just%20plain%20tired%20when%20I%20get%20home%20from%20work,%20and%20then%20it's%20already%20dark%20outside.%20It's%20a%20viscous%20cycle%20that%20kept%20my%20blogging%20mojo%20at%20bay.%3C/p%3E%3Cp%3EThis%20week,%20%20I%20am%20on%20Spring%20Break%20from%20our%20school%20district,%20and%20I'm%20not%3C/p%3E%3Cp%3Egoing%20anywhere.%20%20At%20last,%20I%20have%20the%20time%20to%20sit%20down%20and%20write%20out%3C/p%3E%3Cp%3Eworn%20out%20from%20my%20full-time%20job.%3C/p%3E%3Cp%3EI%20can't%20think%20of%20a%20better%20way%20to%20come%20back%20from%20my%20absence,%20by%20sharing%3C/p%3E%3Cp%3Ethe%20first%20of%20three%20new%20recipes%20that%20I%20made%20for%20yesterday's%20Easter%20family%3C/p%3E%3Cp%3Esupper.%3C/p%3E%3Cp%3Eit.%20%20I%20started%20thinking%20about%20other%20traditional%20dinners%20I%20could%20make.%3C/p%3E%3Cp%3EThen%20it%20hit%20me--%20Passover%20Brisket!%20I%20did%20some%20internet%20surfing%20and%20stumbled%20across%20a%20recipe%20that%20detoured%20me%20from%20the%20Passover%20Brisket%20idea.%20%20This%20recipe%20comes%20from%20one%20of%20my%20favorite%20recipes%20resources:%20%22Cook's%20Country%22%20(part%20of%20the%20Cook's%20Illustrated%20family).%20I%20had%20never%20heard%20of%20%22Atlanta%20Brisket%22%20so%20I%20read%20the%20article%20and%20recipe.%20%20Apparently,%20Atlanta%20Brisket%20is%20a%20Southern%20dish%20that%20traditionally%20uses%20chili%20sauce,%20onion%20soup%20mix%20and%20Coca%20Cola.%20%20Since%20Coca%20Cola%20originated%20in%20Atlanta,%20George,%20that's%20how%20this%20dish%20got%20it's%20name.%3C/p%3E%3Cp%3EI%20don't%20buy%20onion%20soup%20mix,%20and%20I%20rarely%20drink%20Coca%20Cola.%20%20However,%20I%20have%20used%20sodas%20in%20recipes,%20with%20great%20results%20(such%20as%20this%207-Up%20cake).%20%20I%20watched%20the%20video%20on%20America's%20Test%20Kitchen,%20and%20saw%20how%20the%20onion%20soup%20mix%20was%20made%20from%20scratch%20(and%20loved%20it)%20and%20that's%20when%20I%20knew%20this%20would%20be%20our%20main%20dish%20for%20our%20Easter%20Sunday%20Supper.%3C/p%3E%3Cp%3EI%20called%20my%20butcher%20and%20ordered%20a%204-pound%20cut%20of%20brisket,%20with%20the%20fat%20cap%20trimmed%20to%201/4%22.%20%20If%20you%20are%20not%20familiar%20with%20this%20cut%20of%20beef,%20it%20is%20a%20cut%20of%20meat%20from%20the%20breast%20or%20lower%20chest%20of%20beef.%20%20It%20has%20to%20be%20slow-cooked%20because%20of%20all%20the%20connective%20tissue.%20%20%20The%20night%20before,%20I%20poked%20holes%20all%20over%20the%20brisket,%20with%20a%20fork,%20then%20salted%20and%20wrapped%20it%20in%20plastic%20wrap%20and%20gave%20it%20a%20good%20night's%20sleep%20in%20the%20refrigerator.%3C/p%3E%3Cp%3EThis%20is%20how%20we%20slow-grilled%20a%20brisket,%20for%20several%20hours,%20with%20our%20Weber.%20%20Barbecued%20brisket%20it%20so%20delicious%20grilled%20with%20wood%20chips%20(or%20oak,%20if%20you%20have%20that%20kind%20of%20barbecue%20set%20up).%20%20The%20average%20time%20to%20slow%20cook%20a%20brisket%20is%203-4%20hours.%20%20It's%20worth%20the%20wait,%20though.%3C/p%3E%3Cp%3EThe%20next%20day,%20I%20blotted%20the%20brisket%20with%20paper%20towels%20to%20make%20sure%20it%20was%20nice%20and%20dry.%20%20It's%20time%20to%20give%20the%20beef%20a%20good%20and%20even%20sear.%20%20In%20order%20to%20do%20this,%20I%20heated%20some%20vegetable%20oil%20in%20a%2012%22%20skillet,%20and%20placed%20a%20cast%20iron%20Dutch%20oven%20(wrapped%20in%20foil%20for%20easy%20clean%20up)%20on%20top.%3C/p%3E%3Cp%3EPerfect!%20Sear%20both%20sides,%20remove%20and%20set%20aside.%3C/p%3E%3Cp%3EInstead%20of%20using%20onion%20soup%20mix,%20I%20cut%20up%202medium%20onions%20into%20half%20inch%20slices.%20%20These%20were%20cooked%20in%20the%20fond%20left%20by%20the%20seared%20brisket.%20They%20were%20cooked%20until%20soft%20and%20browned%20(but%20not%20caramelized).%3C/p%3E%3Cp%3EThe%20onion%20was%20laid%20on%20in%20a%209x13%20baking%20dish,%20and%20the%20seared%20brisket%20was%20set%20on%20top.%3C/p%3E%3Cp%3EThe%20sauce%20is%20poured%20all%20over%20the%20brisket...%3C/p%3E%3Cp%3EThe%20oven%20is%20preheated%20to%20325F.%20%20Cover%20the%20brisket%20with%20parchment%20paper%20and%20then%20(tightly)%20with%20foil.%20Why%20the%20parchment%20paper?%20%20Because%20you%20don't%20want%20the%20foil%20to%20come%20into%20contact%20with%20the%20acidity%20of%20the%20ketchup.%20%20It's%20all%20science!%20%20You%20now%20have%20about%20four%20hours%20to%20tidy%20up%20the%20kitchen,%20make%20other%20recipes,%20and%20watch%20your%20family%20come%20into%20the%20kitchen%20with%20their%20noses%20in%20the%20air.%20%20It%20smells%20so%20good,%20while%20it's%20braising!%3C/p%3E%3Cp%3EFour%20hours%20later,%20you%20can%20see%20that%20the%20brisket%20has%20had%20some%20shrinkage.%20%20The%20brisket%20needs%20to%20sit%20in%20the%20sauce%20for%2030%20minutes.%3C/p%3E%3Cp%3EOh,%20yum!%20%20Once%20I%20removed%20the%20brisket,%20I%20covered%20it%20with%20foil%20and%20skimmed%20off%20the%20fat%20from%20the%20sauce.%3C/p%3E%3Cp%3EThis%20photograph%20doesn't%20do%20justice%20to%20how%20moist%20this%20meat%20turned%20out.%20%20It%20wasn't%20dry,%20at%20all.%3C/p%3E%3Cp%3EIn%20fact,%20each%20slice%20had%20lots%20of%20juice!%3C/p%3E%3Cp%3ERight%20before%20serving,%20I%20poured%20sauce%20all%20over%20the%20sliced%20brisket.%20It%20was%20plenty%20hot,%20even%20though%20it%20had%20rested%20for%20close%20to%20an%20hour.%3C/p%3E%3Cp%3EHere's%20a%20teaser%20photo%20for%20the%20%22Funeral%20Potatoes%22%20that%20I%20served%20with%20the%20brisket.%20%20This%20was%20equally%20delicious%20(and%20I%20will%20post%20this%20recipe%20next).%3C/p%3E%3Cp%3ECooking%20and%20baking,%20for%20my%20family%20and%20guests,%20is%20my%20Love%20Language.%20%20It%20makes%20me%20happy%20to%20see%20my%20loved%20ones%20enjoying%20their%20food,%20going%20back%20for%20seconds%20(and%20thirds)%20and%20raving%20about%20this%20entire%20menu.%20%20Humbly%20said,%20I%20have%20to%20agree.%20%20I%20got%20lucky%20with%20all%20three%20new%20recipes,%20and%20I%20plan%20to%20make%20them%20again.%20%20What%20a%20feast!%20%20We%20are%20so%20blessed,%20indeed.%3C/p%3E%3Cp%3ERECIPE%20NOTES:%20%20Unanimous%20raves%20were%20that%20the%20meat%20was%20ultra-tender.%20The%20sauce%20has%20a%20mildly%20sweet%20flavor,%20with%20a%20little%20bit%20of%20acidity.%20%20This%20would%20be%20delicious%20served%20with%20mashed%20potatoes,%20to%20slather%20with%20the%20sauce%20(there%20was%20LOTS%20of%20sauce).%20%20I%20had%20six%20guests,%20and%20enough%20leftovers%20for%20two.%20%20So,%20I%20could%20safely%20guess%20that%20this%20serves%208%20people%20(everyone%20had%20seconds).%20%20Can%20this%20be%20made%20in%20a%20slow%20cooker?%20I%20dunno.%20%20It's%20worth%20a%20try,%20but%20would%20take%20at%20least%208-10%20hours.%20%20I%20love%20pressure%20cooking,%20but%20I%20think%20I'd%20leave%20this%20to%20be%20slow-braised%20in%20the%20oven.%3C/p%3E%3Cp%3EWith%20love,%3C/p%3E){kind=link}
