Ingredients
- 1 (8 1/2-ounce) box corn muffin mix (Jiffy works great)
- 1 cup shredded cheddar, divided
- 1/3 cup milk
- 1 egg
- 1 (14 3/4-ounce) can cream-style corn
- 24 ounce can sloppy joe sauce (or homemade), divided
- 1 pound ground beef
- 1 tablespoon butter
- 1/2 sweet onion
- 1 bell pepper, any color
- 1/4 cup diced green onions

%20casserole%20queen,%20so%20when%20I%20noticed%20my%20children%20all%20huddled%20under%20blankets%20trying%20to%20stay%20warm%20this%20week%20I%20decided%20to%20bust%20out%20a%20nice,%20comforting%20casserole.%20Cozy%20and%20warm,%20here%20we%20come!%3C/p%3E%3Cp%3EI%20used%20the%20cornbread%20base%20from%20my%20chicken%20tamale%20casserole%20and%20doctored%20it%20up%20a%20bit%20with%20some%20sloppy%20joe%20sauce%20making%20a%20super%20tangy,%20sweet,%20kid%20friendly%20family%20favorite!%20Serve%20this%20with%20a%20side%20salad%20and%20some%20steamed%20broccoli%20and%20you%20have%20a%20pretty%20easy%20meal.%3C/p%3E%3Cp%3EOne%20note,%20this%20sloppy%20joe%20casserole%20recipe%20uses%20the%20larger%20can%20of%20sloppy%20joe%20sauce.%20You%20DO%20NOT%20have%20to%20use%20all%20of%20it%20here.%20If%20you%20do,%20things%20will%20be%20extra%20saucy%20(not%20a%20bad%20thing!).%20Use%20your%20best%20judgement%20when%20it%20comes%20to%20pouring%20the%20sauce%20into%20the%20meat%20and%20add%20as%20much%20as%20you%20personally%20like%20on%20your%20sandwiches.%20If%20you%20like%20them%20saucy,%20dump%20it%20all%20in.%20If%20you%20like%20them%20dryer,%20leave%20some%20out.%20You%20really%20can%E2%80%99t%20mess%20this%20recipe%20up!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EHeat%20the%20oven%20to%20400%20degrees.%20Spray%20a%209x13%20baking%20dish%20with%20non-stick%20cooking%20spray.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20bowl,%20add%20the%20cornbread%20mix,%201/2%20cup%20of%20cheddar%20cheese,%20milk,%20egg,%20and%20canned%20corn.%20Stir%20until%20well%20combined.%20Pour%20into%20the%20prepared%20baking%20dish.%3C/p%3E%3Cp%3EBake%20for%2015%20minutes%20or%20until%20just%20set.%3C/p%3E%3Cp%3EWhile%20the%20cornbread%20is%20baking,%20heat%20a%20large%20skillet%20over%20medium%20heat%20and%20add%20the%20butter.%3C/p%3E%3Cp%3EWhile%20the%20butter%20is%20melting,%20chop%20the%20onion%20and%20bell%20pepper%20into%20small%20pieces.%20Add%20to%20the%20pan%20and%20cook%20until%20just%20beginning%20to%20soften.%3C/p%3E%3Cp%3EAdd%20the%20ground%20beef%20to%20the%20skillet%20and%20cook%20until%20no%20longer%20pink.%20Drain%20the%20fat.%3C/p%3E%3Cp%3EAdd%20all%20but%201/2%20cup%20of%20the%20sloppy%20joe%20sauce%20to%20the%20pan%20with%20the%20meat%20to%20warm.%3C/p%3E%3Cp%3ERemove%20the%20cornbread%20from%20the%20oven%20and%20use%20a%20fork%20to%20prick%20holes%20over%20the%20cornbread.%20Pour%20the%20remaining%201/2%20cup%20of%20the%20sloppy%20joe%20sauce%20over%20the%20cornbread.%3C/p%3E%3Cp%3ESpoon%20the%20meat%20and%20sauce%20over%20the%20baked%20cornbread%20and%20top%20with%20the%20remaining%20cheese.%20Return%20to%20the%20oven%20for%2015%20minutes.%3C/p%3E%3Cp%3ETop%20with%20the%20green%20onions%20before%20serving.%3C/p%3E%3Cp%3EDon%E2%80%99t%20miss%20a%20post!%3C/p%3E%3Cp%3EStay%20Connected:%3C/p%3E){kind=link}
