Skinny Apple Pie

Skinny Apple Pie is gooey, tender apples with a crispy caramelized crust that is one bowl and easy to make. Low Fat, No Crust!

Ingredients

  • 1 egg
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla
  • pinch of salt
  • ½ cup flour sifted together with 1 teaspoon baking powder
  • 3 medium Granny Smith apples, pare, core and chop into smaller pieces
  • ½ cup pecans or walnuts, chopped
  • Topping: Optional
  • 3 tablespoons butter, melted
  • 2 tablespoons granulated sugar
  • ¼ teaspoon cinnamon

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, beat egg then add the rest of the ingredients in the order listed. Spread in a greased 9-inch pie pan. Bake for 25 minutes (30 minutes if you don't add the topping).
  3. Optional: In a small bowl, combine the melted butter, 2 tablespoons sugar and cinnamon. Carefully remove the pie from the oven and drizzle the butter mixture over the top and return to the oven for 5 minutes, until the top is nice and brown.
