Ingredients

  • (Adapted from Lex's Roast Chicken, Cuisine at Home Magazine)
  • 1/4 cup extra virgin olive oil, plus additional for chicken
  • 3 Vidalia onions, halved and sliced
  • 2 cups sliced celery
  • 3 cloves garlic, minced
  • 1 teaspoon minced fresh thyme
  • 1 teaspoon minced fresh sage
  • 1 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons lemon zest
  • 1/4 cup chopped flat leaf parsley
  • 1 baguette, sliced into 3/4 inch slices
  • 1 5 to 6 pound chicken
  • 1/4 cup lemon juice
