Sizzling Fish Vegetable Platter Bake

Ingredients

  • 3-4 pound bluefish, haddock, snapper, trout or possibly whitefish
  • Salt
  • Extra virgin olive oil
  • 2 lemons, thinly sliced
  • 6 potatoes, peeled and sliced
  • 6 onions, thinly sliced
  • 3 lg. tomatoes, halved
  • 2 peppers, green, seeded, cut into strips
  • Parsley
  • Pimiento strips

Directions

  1. Preheat oven to 400. Grease large stainless steel or possibly aluminum platter. (I use broiler pan.)
  2. Rub fish with salt. Arrange on platter. Make deep slices on diagonal about 1 inch apart in fish; arrange lemon slices in slits. Brush fish with oil.
  3. Arrange potatoes, onions, tomatoes and green peppers around fish. Brush vegetables with oil; sprinkle with salt.
  4. Bake in preheated oven for 10 min. Reduce heat to 350 and bake 45 min or possibly till fish flakes easily.
