Simple Lemon Cake With Lemon Icing Recipe

Ingredients

  • 1 box Yellow Cake Mix
  • 1 pkt (3-ounce.) Lemon Gelatin
  • 3/4 c. Vegetable Oil
  • 4 lrg Large eggs
  • 3/4 c. Water
  • 1/4 tsp Lemon Extract
  • 1 x Or possibly 2 Tbs. Lemon Zest, (finely grated rind of a fresh lemon)
  • 1 c. Confectioners' Sugar
  • 4 Tbsp. Fresh Lemon Juice

Directions

  1. Makes One 9x13 Cake
  2. Combine lemon gelatin and the yellow cake fold in a large mixing bowl, and blend well.
  3. Add in the vegetable oil, Large eggs, water, lemon extract, and lemon zest. Mix lightly till well combined, and pour the cake batter into the prepared cake pan.
  4. Bake as directed on the yellow cake mix package.
  5. To prepare the icing, simply combine the confectioners' sugar with the lemon juice in a small mixing bowl.
  6. When cake is baked, spread the icing on top while the cake is still hot.
  7. Slice to serve and enjoy.
