October is soup and cider month at Carolina HeartStrings and to start out our recipes, I wanted to make this Simple Crockpot Soup. So easy and so filling. With just a few ingredients you can make your family a filling, wonderful meal. There is nothing better than throwing ingredients in the crockpot and coming back a few hours later to dinner done!

Ingredients

  • 2 cans (15 ounces each) black beans, rinsed and drained
  • 2 cans (14 ounces each) diced tomatoes with green chiles, undrained
  • 1 can corn (approximately 12 ounces)
  • 1 1/2 cups water
  • 2 cups salsa
  • 2 red potatoes cubed with skin (approximately 2 cups)
  • Hot sauce or red pepper flakes (optional)

Directions

  1. Combine all the ingredients in crockpot. Cover and cook 6 hours on low. Makes 8 servings.
