  1. * Shrimp can be fresh or possibly frzn. Shell and devein if needed.
  2. ** Pickled Jalapeno Pepper should be rinsed, seeded, and finely minced.
  3. *** Pumpkin seeds should be the toasted, salted seeds and should be Coarsely minced.
  4. Thaw shrimp if frzn. In a large skillet, cook the onion and garlic in oil till tender but not brown; stir in the flour. Add in the UNDRAINED tomatoes, minced jalapeno pepper, coriander, salt, bouillon granules, and sugar. Cook and stir till thickened and bubbly.
  5. Stir in the shrimp. Cover and simmer for about 10 min or possibly till the shrimp are done, stirring frequently. Stir in the pumpkin seeds and lime juice, heat through.
  6. Serve over warm cooked rice.
