  • 2 T olive oil
  • 1/2 cup unsalted butter
  • 1/2 t salt
  • 1/8 t pepper
  • 6 cloves garlic, crushed
  • 1 pound large shrimp, peeled, deveined and tail removed
  • (If using frozen shrimp, thaw before using)
  • 1/4 cup white wine
  • 4 T Parmesan cheese, divided
  • 2 t grated lemon peel
  • 1 T lemon juice
  • lemon wedges, optional
  • 1- 16 oz package Lemon-pepper Fettuccine*
  • Cook pasta according to package directions
  • 1 pound carrots, peeled and cut diagonally into "coins"
  • 2 T butter
  • 2 T honey
