Shrimp Salsa

Kind of like ceviche, kind of not...but it's great with tortilla chips!

Goes Well With: Tortilla chips

Ingredients

  • 1/2 pound salad shrimp or larger shrimp, chopped
  • 3 roma tomatoes, chopped
  • 1 medium red onion, chopped
  • 1 cucumber, peeled, seeded and chopped
  • 1/4 cup freshly squeezed lime juice
  • 1/3 cup chopped fresh cilantro
  • 2 jalapeno peppers, seeded and deveined, finely minced
  • Salt & Pepper, to taste

Directions

  1. Combine all ingredients in a large non-reactive bowl.
  2. Mix to combine.
  3. Cover and refrigerate for at least 4 hours or overnight for flavors to combine.
