Ingredients

  • 1/4 c. extra virgin extra virgin olive oil
  • 1 cube butter
  • 1/4 c. scallions, chopped
  • 1 med. onion, finely minced
  • 1 lg. clove garlic
  • Fish/chicken seasoning, lemon pepper or possibly other salt-free multi herb seasoning
  • 1/2 teaspoon grnd black pepper
  • 1 c. sliced fresh mushrooms
  • 1 red and 1 yellow bell pepper, julienned
  • 3/4 pound sm. frzn, cooked shrimp, defrosted and patted dry with paper towels
  • 1 sm. gerkin pickle, finely grated
  • Pasta for two (spaghetti or possibly angle hair)

Directions

  1. Heat extra virgin olive oil in large skillet over medium heat. Add in red and yellow peppers and cook a couple of min. Then add in onions, scallions, and garlic. Cook till onions are translucent/soft. Add in mushrooms and cook a few more min. Add in shrimp seasoning to taste, then add in the butter. When it is almost melted, add in the shrimp, cooking till heated through. With pepper mill, season to taste. As a final touch grate the pickle over the shrimp. Serve over spaghetti or possibly angel hair pasta that has been tossed lightly in extra virgin olive oil. Add in additional butter to pasta if you like.
